A Serious Favorite!

Now that corn and pepper season is in full swing, LuLu's Farm dished up this super easy and amazingly delicious recipe just for you!

COWBOY CAVIAR

2 cups black beans (canned or cooked)
2 cups pinto beans (canned or cooked)
2 cups black eyed peas (cooked or canned)
1 cup fresh corn kernels
1 each red, green, orange, and yellow bell peppers, chopped
1 small white onion chopped
1 bunch of green onions sliced
1/4 cup chopped parsley (optional)
1 jalapeno chopped fine (optional)


Marinade
1/3 cup oil (avocado or grape seed is recommended)
1/2 cup Apple Cider vinegar
1/3 cup sugar


Directions
Combine oil, sugar and vinegar in small saucepan and bring to a boil for about one minute. Remove from heat and cool completely.
Combine chopped ingredients in a large bowl, pour cooled marinade over and mix thoroughly to ensure even coating.
Cover tightly and let sit at least 24 hours stirring once or twice to marinate evenly.
Drain, and keep refrigerated until ready to serve.
For an extra punch to both taste and look, top with sliced avocado dipped in lemon juice to keep it from browning.
